Ingredients

  • 2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, shredded

  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • 12 slices of soppressata, finely chopped
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Olive oil cooking spray

  2. Remove the cooked rice from heat and let it cool for a few minutes. Then, stir in the grated Parmesan cheese, shredded mozzarella cheese, chopped fresh parsley, garlic powder, onion powder, salt, and freshly ground black pepper. Mix until well combined.
  3. Take a small amount of the rice mixture and flatten it in your hand. Place a piece of chopped soppressata in the center and encase it with the rice, forming a mini rice ball. Repeat this process to make all the mini rice balls.
  4. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
