Instructions
- In a large saucepan, bring the chicken or vegetable broth to a boil. Add the Arborio rice and reduce the heat to low. Simmer, covered, for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove the cooked rice from heat and let it cool for a few minutes. Then, stir in the grated Parmesan cheese, shredded mozzarella cheese, chopped fresh parsley, garlic powder, onion powder, salt, and freshly ground black pepper. Mix until well combined.
- Take a small amount of the rice mixture and flatten it in your hand. Place a piece of chopped soppressata in the center and encase it with the rice, forming a mini rice ball. Repeat this process to make all the mini rice balls.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In one bowl, place the beaten eggs. In another bowl, place the breadcrumbs.
