Description

This vibrant Shrimp Green Bean Salad combines tender shrimp, crisp green beans, and a tangy Dijon dressing for a light and refreshing meal.


Ingredients

Scale
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound green beans, trimmed
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste
  • Optional: Chopped parsley or dill for garnish

Instructions

  • Bring a pot of salted water to a boil. Cook green beans for 3-4 minutes, until tender-crisp. Drain and rinse under cold water.
  • In the same pot, cook shrimp for 2-3 minutes, or until pink and opaque. Drain and set aside.
  • In a small bowl, whisk together olive oil, Dijon mustard, lemon juice, honey, salt, and pepper to make the dressing.
  • In a large bowl, combine green beans, shrimp, and red onion. Toss with the dressing.
  • Garnish with parsley or dill and serve chilled or at room temperature.
