Description
This vibrant Shrimp Green Bean Salad combines tender shrimp, crisp green beans, and a tangy Dijon dressing for a light and refreshing meal.
Ingredients

- 1/2 pound shrimp, peeled and deveined
- 1/2 pound green beans, trimmed
- 1/4 cup red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
- Optional: Chopped parsley or dill for garnish
Instructions
- Bring a pot of salted water to a boil. Cook green beans for 3-4 minutes, until tender-crisp. Drain and rinse under cold water.
- In the same pot, cook shrimp for 2-3 minutes, or until pink and opaque. Drain and set aside.
- In a small bowl, whisk together olive oil, Dijon mustard, lemon juice, honey, salt, and pepper to make the dressing.
- In a large bowl, combine green beans, shrimp, and red onion. Toss with the dressing.
- Garnish with parsley or dill and serve chilled or at room temperature.
Notes
- Add cherry tomatoes or avocado for extra color and flavor.
