This Falafel Hummus combines the earthy, herby flavors of falafel with the creamy texture of hummus, creating a dip or spread that’s perfect for pairing with pita bread, veggies, or as a sandwich filling.


Ingredients

Scale
  • 1 1/2 cups cooked chickpeas (or canned, drained, and rinsed)
  • 2 tablespoons tahini
  • 3 tablespoons olive oil
  • 1 clove garlic
  • 1/4 cup fresh parsley, packed
  • 1/4 cup fresh cilantro, packed
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 23 tablespoons water (to adjust consistency)

Instructions

  • In a food processor, combine the chickpeas, tahini, olive oil, garlic, parsley, cilantro, cumin, coriander, and lemon juice.
  • Blend until smooth, scraping down the sides as needed.
  • Add water, one tablespoon at a time, to achieve your desired consistency.
  • Season with salt and pepper to taste, blending again to incorporate.
  • Transfer the hummus to a serving bowl, drizzle with olive oil, and garnish with a sprinkle of parsley or paprika if desired.

  • Serve with warm pita bread, fresh vegetables, or use as a spread in wraps and sandwiches.
