Description

This Chicken Pot Pie with Crescent Rolls offers a quick and delicious twist on the classic comfort dish. Tender chicken and mixed vegetables are enveloped in a creamy sauce, all topped with a flaky crescent roll crust, making it a perfect choice for a satisfying dinner.

Ingredients

Scale
  • 2 packages refrigerated crescent rolls
  • 1.5 lbs boneless, skinless chicken breast, cooked and cubed
  • 16 oz frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup milk
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Optional: 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/4 teaspoon dried thyme, 1/4 teaspoon dried basil, 1/4 teaspoon dried oregano

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Prepare Filling: In a large saucepan over medium heat, melt the butter. Add the frozen mixed vegetables and cook until tender, about 5 minutes. Stir in the cream of chicken soup and milk, mixing until well combined. Add the cooked chicken, and season with salt, pepper, and optional spices (garlic powder, onion powder, thyme, basil, oregano). Let the mixture simmer for 5 minutes, stirring occasionally.
  • Assemble Pie: Unroll one package of crescent rolls and press the seams together to form a solid sheet. Place this dough sheet into the bottom of a greased 9×13-inch baking dish, stretching it to cover the bottom. Pour the chicken and vegetable mixture over the dough, spreading it evenly. Unroll the second package of crescent rolls, press the seams together, and place it over the filling to form the top crust.
  • Bake: Bake in the preheated oven for 20-25 minutes, or until the crescent roll crust is golden brown.
  • Serve: Remove from the oven and let it rest for a few minutes before serving.

Notes

  • For added flavor, consider using a rotisserie chicken.
  • Feel free to substitute the mixed vegetables with your preferred choices.
  • Ensure the crescent roll seams are well sealed to prevent leakage during baking.
